One thing that has been revealed to me during everyones current obsession with cottage cheese is that cottage cheese can truly be used in a variety of ways. From cottage cheese cookie dough to cottage smoothies to cottage cheese lasagne, this nutritious dairy product has found its way into plenty of unique recipes!

Despite its creative opportunity, I still like to keep my recipes with cottage cheese fairly simple and to the point… like this easy rosemary cottage cheese toast for one! A hearty piece of toast topped with cottage cheese, two scrambled (or fried) eggs, and fresh rosemary makes for a delicious, protein packed breakfast that is full of flavor and creamy cottage cheese.

Is cottage cheese healthy?

The reason why cottage cheese has risen in popularity is because of its mild flavor, affordable price, and nutrient density. Like many other dairy products, cottage cheese is loaded with protein, calcium, vitamin D, phosphorous, and other health promoting nutrients while remaining low in calorie.

The other nice thing about cottage cheese is that it is offered in a variety of fat percentages which makes it an easy food to add to your plate regardless of your health and fitness goals. My personal favorite brand of cottage cheese is Good Culture Cottage cheese because:

  1. It has smaller curds and tastes delicious.

  2. It contains live and active cultures which support gut health.

  3. Good Culture offers a lactose free cottage cheese which is perfect for those with lactose intolerance.

Good Culture is delicious but there are tons of other delicious cottage cheese brands for you to try!

Rosemary Cottage Cheese Toast with Eggs

Ingredients:

  1. Your choice of bread: I recommend a medium sized slice of sourdough or rosemary bread but whole wheat toast would be great too.

  2. Cottage Cheese: I used full fat cottage cheese but you can use whatever cottage cheese you enjoy.

  3. Eggs: scrambled or fried.

  4. Fresh rosemary: I recommend fresh but dried would work too.

  5. Garlic salt: just a sprinkle to balance out the herbs.

The Process:

This easy cottage cheese toast is ready in a few simple steps:

  1. Chop your rosemary into fine pieces. Add your eggs, rosemary, and garlic salt to a small sauce pan and cook over low to medium heat. You can scramble or fry your eggs to your preference.

  2. Slightly toast your bread then top with your cottage cheese and cooked eggs. Serve and enjoy!

Substitutions and Swaps:

Rosemary cottage cheese toast is deliciously simple but you can make it your own and swap out or swap in ingredients that you like. Here are some suggestions:

  • Omit the eggs: if you don’t want cottage cheese toast for breakfast, you can omit the eggs and just enjoy it with cottage cheese itself. If you want to do that, I would add the rosemary and garlic salt directly to your cottage cheese.

  • Add extra seasonings: I like to let the herbs shine through and keep all other seasonings simple but you can spice this up with more Italian herbs, pepper, minced onion, and more!

  • Toss in some veggies: sautéed spinach, mushrooms, and onions would go great with this toast. If you start to add ore ingredients, I would add closer to a tablespoon of fresh rosemary.

  • Add other proteins: herby chicken or crispy tofu could be a good substitution for the eggs and make this cottage cheese toast more dinner ready!

  1. Can I make this in advance?

    1. No, this recipe is best made fresh then served immediately. The easiest way to make this recipe more “meal prep friendly” would be to hard boil your eggs, season your cottage cheese with the rosemary and garlic salt and then store those components in two separate containers. Then, arrange your toast when you are ready to eat!

  2. Can I use dried rosemary?

    1. I recommend using fresh rosemary but dried rosemary would work as well!

  3. How should I adjust this recipe if I’m making more than one?

    1. The recipe is written as a single serve recipe but it would be very easy to make this recipe for a crowd! Simply adjust all of the ingredients by multiplying it by the number of mouths you are feeding and then portion equally across the pieces of toast.
