As a media dietitian, I pay attention to trending foods, recipes, and ingredients that consumers are loving. From viral sweet potato bowls to creative cottage cheese recipes, there have been many different foods that have taken over my social media feeds.
Part of the fun in working online is predicting which foods I think will be the NEXT trend. My guess? Medjool dates. Yes, yes- we have all seen the viral date bark recipes, but I think that medjool dates are going to start popping up in other recipes as well.
From smoothies to salads to simple snacking, medjool dates are a great way to add some natural sweetness (and nutrition!) to your recipes. With peanut butter stuffed dates being a popular recipe, I decided to take it a few steps further and prep these caramel apple stuffed dates instead.

Only 4 ingredients: All you will need for this recipe are medjool dates, tart green apples, creamy peanut butter (or nut butter of your choice), and a crunchy topping like granola.

Ingredients you’ll need:
Medjool dates are so sweet that you often do not need alot of ingredients paired with them to create something delicious. For these caramel apple stuffed dates, all you’ll need is:
Medjool dates- My FAVORITE dates are Natural Delights whole medjool dates. I prefer using whole medjool dates and removing the pit because I find them to be a bit softer but you could also buy pitted dates and save yourself the effort of removing the pit.
Creamy peanut butter- You’ll want just a touch of peanut butter in this recipe. You could also use almond butter or walnut butter if you preferred.
Tart green apple- I highly recommend using a green apple for this recipe so that you get a nice sour and sweet flavor combination.
Granola- I used the Honey Oat granola by Kodiak Cakes but you could use any other neutral flavored granola. You could also use finely chopped peanuts!

Step by Step Instructions:
1) Chop 1/2 of your tart green apple into thin rectangles. These should be about the length of your medjool dates.
2) Take your medjool date, split it open, and remove the pit. You could also save yourself this step by buying pitted dates.
3) Add about 1 tsp to 1/2 tbsp of creamy peanut butter to your date. Remember that you will also be adding green apples to your date, so try not to overfill it with peanut butter.
4) Add two to three thin slices of green apple.
5) Pinch your date closed, removing any excess peanut butter. Sprinkle with granola and enjoy!
Swaps, substitutions, and serving suggestions:
Peanut butter stuffed dates can be made in so many different ways. Here are a few ways that you can change up this recipe:
Use PB2 powder: If you want to lower the calorie content of each bite, you could swap the peanut butter for PBFit.
Change your nut butter: Walnut butter is one of my favorite nut butters to pair with dates because it is slightly salty. You could also use almond butter or sunflower butter to stuff your dates as well.
Switch out your fruit: Tart green apples give you the most “caramel apple” flavor but you could use a red apple as well. If you want to change the fruit all together, swap it out for freshly sliced strawberries instead.
Drizzle them with chocolate: Take your peanut butter stuffed dates even further with a drizzle of chocolate.
Add chopped nuts: Skip the granola and use finely chopped peanuts instead.

Medjool dates do have a slightly higher carbohydrate content than other fresh fruits do, which explains their very sweet flavor. However, medjool dates are also nutrient dense and contain dietary fiber and 16 essential vitamins and minerals.
Is a medjool date a fresh fruit or dried fruit?
Medjool dates are a fresh fruit and one serving is about 3 dates.
How to check if my medjool date has mold?
Medjool dates have very low water activity and are actually less likely to grow mold than other fresh fruits. Often times, the natural sugars in the dates can crystallize and leave a white residue on the exterior of the date that some people may mistake for mold.
To check for mold, I would recommend opening up your date and searching the inside for mold or black spots. While unlikely, this can occur due to improper storage.
