Cold cuts: You can choose whatever cold cuts you prefer but the key is to have a mix of 3 to 4 and choose one that has a little bit of spice… like salami! I used ham, black pepper turkey, and salami.
Provolone cheese: Provolone cheese is the most common for the grinder salad recipes but you could sub it for mozzarella or Swiss as well.
Tomatoes: I recommend layering on slices of a roma tomato to keep the chopping simple.
Cucumber: Cucumber always adds a delicious and fresh flavor and crunch to any salad recipe.
Pepperoncini peppers: These are KEY for the Italian flavor profile. Add these to taste and adjust to your own family.

Here’s the best part about making any grinder salad recipe… the prep could not be easier!
Here’s what you’ll do:
1) Grab your largest cutting board and layer all of your ingredients in a pile. Then, add your mayo, red wine vinegar, and seasonings to the top.
2) Use a large knife and thoroughly chop your grinder salad. Continue to toss the ingredients in the dressing components until everything is well coated and chopped into small, bite sized pieces.
3) Place about half of your grinder salad mixture into the middle of your large wrap. Fold in both edges lengthwise then roll it into a wrap. This recipe will make 2 to 3 wraps depending on how much grinder salad you add to each tortilla. Serve immediately and enjoy!

Change how you serve it: As I mentioned, there are many different ways to enjoy the grinder salad. Today, we turned it into a grinder salad wrap but you could also serve it as a Grinder pasta salad or the classic grinder salad sub instead!
Add other vegetables: Red onion, sprouts, broccoli, carrots, and other vegetables could all be added to your cutting board and finely chopped.
Change your lettuce base: I think the crunchy iceberg lettuce is key for a crisp Italian grinder salad but you could substitute it for a darker green like kale or spinach if you prefer.
Opt for different cold cuts: I used ham, black pepper turkey, and salami for this grinder salad wrap recipe but you could use any cold cuts like prosciutto, roast beef, pastrami, pepperoni, and more. If you want to skip the cold cuts entirely, use cooked chicken!
Add more protein: Add a scoop of cottage cheese instead of mayo for a small protein boost to your dressing. You could also double the portion of cold cuts and cheese for the same flavors but extra protein.

Can I meal prep this grinder salad wrap?
NO! One reason why most people serve the grinder salad on bread is because the bread helps absorb some of the red wine vinegar dressing… which a tortilla simply does not do.
To avoid a soggy tortilla, I recommend prepping these wraps and enjoying them immediately. If you wanted to cut down on steps, you could chop all of the ingredients and then add the dressing and wrap it in the tortilla when you are ready to eat.
Do I have to use cold cuts?
A variety of cold cut meats are a key component for the viral grinder salad recipe so I would say yes if you want the classic flavors.
If you really want to skip using cold cut meat then you could use cooked chicken instead.
How long will this wrap last in the refrigerator?
The red wine vinegar makes this wrap NOT meal prep friendly so it would not store in the refrigerator. I recommend making this wrap when you are ready to serve enjoy it immediately.
