As a dietitian, fajitas are typically one of my go-to restaurant orders because they are loaded with flavor, full of veggies and protein, and generally contain simple and straight forward ingredients. Plus, they make delicious leftovers… a win, win!

When I want the flavor of restaurant fajitas but made at home and loaded with other colorful ingredients, I make these fajita ground beef and sweet potatoes that are coated in a homemade taco seasoning blend.

Seasoned ground beef is mixed with sheetpan fajita veggies and taco seasoned sweet potatoes for a delicious dinner that is the perfect combination of sweet and savory flavors. Plus, this recipe leaves you with minimal cleanup and a healthy fajita bowl dinner that your entire family will love.

  2. Sweet potatoes: Sweet potatoes are full of naturally sweet flavors and rich in nutrients like vitamin A, potassium, and fiber. Wash, dice, and cube your potatoes.

  3. Bell peppers: Choose your favorite color and reminder that every color of vegetable features a different nutrient! I used red, orange, and green bell peppers for this recipe.

Step by Step Instructions:

1) Add your separate seasonings to a small bowl and stir together to form a homemade taco blend.

Preheat your oven to 400 degrees. Wash your sweet potatoes then cut them into bite sized cubes. Place in a large bowl, add cooking oil of choice, then season with 1/3 of your taco blend. Place on a large sheet-pan and roast in the oven for 15 minutes.

2) Thinly slice your bell peppers and onion. Add your chopped vegetables to the same bowl that the sweet potatoes were in, drizzle with avocado oil, and season with 1/3 of your taco seasoning. Toss until fully coated.

3) After your potatoes have roasted for 15 minutes, remove your pan of sweet potatoes from the oven and push the sweet potatoes to one half of the sheet pan. Add your vegetables to the other half of the pan then return to the oven and bake for another 25 minutes.

4) While your vegetables roast, place your ground beef in a large skillet and season with another 1/3 of your taco seasoning blend. Brown your beef until fully cooked through which will take 12-15 minutes. Set aside once it is finished cooking.

5) When there is 5 minutes of cook time remaining, stir your cooked ground beef into your fajita veggie mix and place back in the oven to allow everything to warm. Remove from the oven and top the sheet pan meal with your fresh lime juice and finely chopped cilantro.

6) Assemble your bowl by placing your cooked sweet potatoes on the bottom and topping with the fajita veggie ground beef mix. Add toppings of choice like shredded cheese, avocado, and sour cream and enjoy!

  1. Add all of your seasonings to a small bowl and mix together to form a homemade taco seasoning.

Toss until fully coated. After the 15 minutes is up, remove your pan of sweet potatoes from the oven and push the sweet potatoes to one half of the sheet pan. Add your vegetables to the other half of the pan then return to the oven and bake for another 25 minutes.
  4. While your vegetables cook, add your ground beef and remaining 1/3 taco seasoning mix to a large skillet and brown until your meat is fully cooked through (about 12-15 minutes). Once cooked, remove from heat and set aside.
  5. When there is 5 minutes of cook time remaining, stir your cooked ground beef into your fajita veggie mix and place back in the oven to allow everything to warm. Remove from the oven and top the sheet pan meal with your fresh lime juice and finely chopped cilantro.
