After I had my son, I found myself relying on convenient and shelf stable snacks. I was exhausted, trying to sync up with a newborn, and needed quick and easy fuel to get me through the day. While pantry snacks certainly have their place - like they did in my post-partum experience- lately, I have really been working hard to fill my fridge with convenient fruit and vegetable snacks instead. This way, my convenient colorful snacks are just as easy to grab as those convenient pantry snacks.  

I wanted to lean into some of my favorite snacking vegetables and cucumber is the first one I reached for. Cucumber is one of my all-time favorite vegetables because of its fresh flavor, portability, and diversity. Toss cucumber in a drink, add cucumber to a salad, or enjoy cucumber as a snack! What’s not to love? To make snacking on cucumber a little bit tastier, I created this easy spicy cucumber snack recipe that is a delicious and convenient way to enjoy vegetables for snack.

Is cucumber healthy?

Cucumber is a healthy vegetable to include in your meals and snack. It is very low in calorie and contains micronutrients like potassium, phosphorous, magnesium, and even some (though not alot of) calcium It’s naturally occurring electrolytes coupled with the fact that cucumber is about 96% water makes cucumber a very hydrating vegetable to reach for as well! As mentioned before, you can use cucumbers is a variety of ways including bowls, salads, drinks, and can even enjoy cucumber as a snack.

  • Uses only a few ingredients: simply chop and add these few ingredients for a fresh take on a vegetable snack.

  • Can be used in a variety of ways- I wrote this to be a cucumber snack recipe but have actually used these spicy cucumbers in salads, bowls, and wraps as well!

  • Makes snacking on vegetables easier- enjoying cucumber as a snack is an easy way to get in more vegetables but some people may find that a bit bland. While you can definitely pair cucumber with hummus or dressings, using this easy recipe is another way to snack on this fresh vegetable.

Ingredients:

  1. Cucumber- I love to use persian cucumbers because I find them easier to snack on but you can use a regular cucumber as well. You will need 2 cups of chopped cucumber which is about 1 large cucumber or 5 Persian cucumbers.

  2. Low sodium soy sauce- you could also use liquid aminos which is a very popular soy sauce alternative.

  3. Sesame oil- just a splash of sesame oil adds so much flavor to this cucumber snack recipe but you’ll also love using it in a stir fry or in a marinade!

  4. Toasted sesame seeds- for flavor and appearance.

  5. Crunchy Chili Onion- y’all, I put this stuff on everything. Eggs. Cottage cheese. Cucumbers. I buy mine from Trader Joes but there are other options to choose from!

Recipe FAQ:

  1. How long will this cucumber snack save?

    o  Cucumbers have a high water content and the salty soy sauce likes to pull this water out of the cucumber which makes them mushy. For this reason, I recommend enjoying these spicy cucumbers within 24 hours!

  2. What if I don’t have crunchy chili onion?

    o I highly recommend you buy some, you will love it! If you don’t have some for this recipe, I would add some heat with crushed red peppers instead.

  3. Do I have to use cucumbers?

    o No! The flavors would go well on tons of other vegetables like finely chopped broccoli or even edamame!
