Oats will forever have my dietitian and toddler moms heart. From their fiber rich carbohydrate content to their recipe versatility, it seems that whole grain oats find their way into so many different healthy snacks and breakfast bars.

Honestly, I think one of my favorite things about cooking with oats is that my toddler almost always eats what I make out of them! I love to offer him safe foods that are ones I know he will eat and ones that I feel good about serving time and time again and oats fall into that category for us.

From 3 ingredient oatmeal balls to chocolate overnight oats, he’s pretty willing to try any oat based recipe but I will tell you that he jumps for joy when I make him these blended biscoff baked oats. They are by far his favorite oatmeal breakfast recipe and he now calls this his “breakfast cake.”

Blended oats are mixed with creamy biscoff, egg, milk, and other simple ingredients then baked into a soft baked oatmeal bar with a cake like texture. Topped with extra creamy biscoff, you just may start calling this family friendly breakfast recipe your “breakfast cake” as well!

Blended Biscoff Baked Oats

Why you’ll love this baked oatmeal recipe:

This soft baked biscoff oatmeal recipe is one of me and my toddlers favorite breakfasts to have in the refrigerator because it is:

  • Simple ingredients: These bars only call for oats, milk, eggs, creamy biscofff, and a few other ingredients that are blended together then baked into oatmeal bars.

  • Made with blended oats: These baked oatmeal bars are slightly different than other baked oatmeal recipes because all of the ingredients are blended together with the oats to give you more of a cake texture instead of a baked oatmeal texture.

  • Subtly sweet: The creamy biscoff adds the perfect amount of flavor and sweetness to this recipe. If you want it extra sweet, you could always add in some brown sugar but I recommend trying it with just the biscoff blended in and spread thin over the top.

  • Soft baked oatmeal bars: The blended oat base gives these bars an incredibly soft, spoon worthy texture that is a fun change up in the morning. My son calls this recipe his “breakfast cake” and I love that it’s actually made with oats!

  • Meal prep friendly: You can make these breakfast bars on a sunday and reheat your oatmeal squares all week long for an easy meal prep breakfast.

  • Freezer friendly: These oatmeal bars are not meal prep friendly AND freezer friendly. Simply bake your oatmeal bars, allow them to cool completely then slice them into squares and place them in a freezer safe bag to freeze. I would add the biscoff topping just before you are ready to eat.

How to make healthy baked oatmeal:

You may look at the nutrition label for some baked oatmeal recipes and audibly gasp at the carbohydrate content that you see. Take it from this dietitian- your body needs carbs and including carbohydrates at breakfast will actually help fuel you through the day.

Now here is the deal with carbohydeates- you want better carbs and balanced carbs. Better, meaning higher in fiber. Balanced, meaning paired with other satiating nutrients like protein and fat to keep you fuller for longer.

When it comes to making healthy baked oatmeal, here are some tips to help you achieve both the “better” and “balanced” aspects of a high carbohydrate breakfast:

  • Add other sources of fiber- oats themselves are already rich in fiber but you can easily add other sources of fiber by mixing in fresh berries, nuts, chia seeds, flax seeds, and more.

  • Minimize your added sugar- yes, I’m giving this advice on a biscoff sweetened oatmeal recipe but know that this is one of the biggest opportunities to make a healthier baked oatmeal recipe. Oatmeal can be heavily sweetened with sugar, so this is one spot to watch!

    Instead of mixing all of your sweeteners into the mix, I like to add them to the top which helps you appreciate the flavor more and ultimately helps you reduce the added sugar content!

  • Add fat- Add sources of fat like whole milk, nut butters, or nuts to add some healthy fats.

  • Pair it with a protein- You can always mix eggs and milk into your oatmeal bake to boost the protein but I also recommend serving your oatmeal bars with high protein foods like eggs, egg muffins, greek yogurt, cottage cheese, or even a string cheese to balance out the carbohydrates

    If you want to make a high protein oatmeal bake then you can always stir in some protein powder to your mix!

  • Include some color- Oatmeal is a great way to include fresh berries, crisp apples, or smashed bananas in your diet. This recipe doesn’t have any colorful fruits in the recipe itself but you could always serve it with a side of high fiber berries or a peanut butter banana.

With a few adjustments, baked oatmeal bars can be a healthy and balanced breakfast to reach for every morning!

Biscoff Protein Balls

Ingredients and Instructions:

Ingredients:

  • Old fashioned oats: Blended into an oat flour for a softer texture in your baked oats

  • Eggs: The eggs will help bind your oatmeal together plus add a little protein boost.

  • Milk: I used whole milk for extra fat and protein but you could try this recipe with a milk alternative if you need a plant based option.

  • Creamy biscoff: The star of the show is creamy biscoff which acts as a binder for the oats as well as the sweetener. We are going to blend the creamy biscoff into our oatmeal bars as well as spread a thin layer of creamy biscoff to the top of the baked oats as well.

  • Vanilla extract: For flavor depth.

  • Salt: To balance out the sweetness.

  • Baking powder: This will help your baked oats rise and give it a cake like texture.

Biscoff Baked Oats Step-By-Step Instructions

Step 1

Add all of your ingredients to a large blender or food processor and blend until smooth.

Step 2

Pour your blended oats into a 8x8 baking pan lined with parchment paper, tin foil, or sprayed with non-stick spray. Bake at 325 for 17-18 minutes or until a fork comes out clean.

Remove from the oven and set aside to cool.

Step 3

Spread a thin layer of creamy biscoff on top of your baked oats, allow them to cool entirely, then slice into bars and serve with a spoon. Enjoy!

How to serve biscoff baked oats:

I would recommend warming these blended biscoff baked oats in the microwave and then serving them with a low added sugar, high protein breakfast food such as:

  • Greek yogurt

  • Hardboiled eggs

  • Cottage cheese

  • Pumpkin seeds or other nuts

  • Cottage cheese egg bites

  • A slice of quiche

  • Tofu vegetable scramble

  1. Are these oatmeal bars crunchy or soft?

    1. Every time I post an oatmeal bar recipe I have some people who are surprised that they are not granola bar texture so be sure to note that these oatmeal bars are SOFT and will have a cake like, spoon worthy texture. As they cool in the refrigerator, they will firm up a bit.

  2. How to store oatmeal bars?

    1. After you have sliced your oatmeal bake into individual bars, I would store them in a glass container in the refrigerator for 3-5 days. When you are ready to enjoy one for breakfast, simply reheat it in the microwave for 30-45 seconds.
