  2. Garlic: Freshly minced.

  3. Onion: Finely diced.

  4. Canned diced tomatoes: We will use the entire can, including the juice, in this recipe. The liquid will combine into the cottage cheese sauce to create a delicious tomato based sauce that adds flavor to your dish!

2) Add your can of diced tomatoes (including the liquid), spinach, tortellini, cottage cheese, milk, and dried basil to your pan. Stir until well combined, pressing the ingredients down into the liquid.

Reduce your stove heat to low/medium, cover your pan with the lid, and simmer your ingredients for 20-25 minutes, stirring occasionally. Your dinner is done when your tortellini have all softened.
