Did anyone else fallen in love with the PF Changs lettuce wraps? I can say with confidence that, prior to the lettuce wrapped burger at In-N-Out, the lettuce wraps at PF Changs are what initially peaked my interest in lettuce wrapped dinners.

While lettuce wraps are a popular low carb dinner for those who want low carb recipes, using lettuce wraps is also a great way to add more vegetables to your diet. Plus, lettuce wraps are incredibly versatile, easy to make, and the stuffed can be meal prepped ahead of time for you to enjoy throughout your week.

These ground beef lettuce wraps are my recent take on the PF Changs lettuce wraps… but busy mom style because we rely on quick weeknight dinner recipes around here. I mean, who has time to spend a full hour in the kitchen around 5 o’clock which is arguably the most chaotic time of the day? Not I.

Ready in 20 minutes and using just one pan, the ground beef and rice stuffing is full of easy to use ingredients that cook quickly and taste amazing when they simmer together. Coated in a light homemade teriyaki sauce, these teriyaki ground beef lettuce wraps keep high protein recipes easy and delicious!

Here’s what you’ll need for this easy protein dinner recipe:

  • Ground beef: I used one pound of lean (93%) ground beef. Ground beef is full of protein, vitamin B12, iron, zinc, and other nutrients to add the protein to this high protein dinner recipe.

  • Frozen stir fry vegetables: Frozen vegetables are frozen at peak ripeness, locking in nutrition and actually making frozen vegetables more nutrient dense than fresh. I also prefer to use frozen vegetables in my stir fry recipes because they cook down quicker and softer, making them easier to eat.

  • Cooked jasmine rice: You can cook your own rice, use microwaveable bag, or skip the rice all together if you want an even more low carb dinner recipe.

  • Low Sodium Soy sauce: This will be the base of your low sodium teriyaki sauce.

  • Brown Sugar: For sweetness in the sauce. You can also use honey and make this a honey teriyaki sauce which will have a slightly different flavor but still be delicious!

  • Seasoned Rice Vinegar: Just a splash!

Now let’s walk through how to make these easy ground beef lettuce wraps because you’ll just need 20 minutes and one large pan:

Step 1:

Warm a large skillet over medium heat then add your ground beef. Season lightly with garlic salt and pepper and cook for 8 minutes, or until your ground beef is mostly cooked through.

Add the frozen vegetables to your ground beef, cover, and cook over medium heat for another 10-12 minutes, stirring occasionally until your vegetables are defrosted and softened.

While your meat and veggies cook, stir together the soy sauce, brown sugar, seasoned rice vinegar, garlic, ginger, sesame oil, and corn starch in a small bowl. Cook your rice in the microwave (or according to package instructions if you are boiling it on the stovetop instead).

Add the cooked rice and sauce to your ground beef and vegetable mixture then stir until everything is well combined. Turn off the heat, cover, and have your ingredients to all sit for 1-2 minutes to allow the sauce to thicken.
