This delicious one pot lasagna recipe is the perfect dinner recipe for when you are craving lasagna but don't want to commit to layering lasagna. Deconstructed lasagna pulls together all of the cozy flavors of lasagna but in one pot and in under 35 minutes!

You know those nights when you are craving lasagna but don’t want to go through the process of prepping lasagna? Yeah, I’ve been there and those are the nights that I prep this delicious one pot lasagna recipe instead.
I’m a busy mom, sometimes I don’t have time for lasagna layers… and you may not either!
Loaded with all of the flavors of classic lasagna and topped with creamy ricotta, melted mozzarella, and tasty parmesan cheese, this deconstructed lasagna recipe comes together in one pot and will be on your dinner table in less than 40 minutes. Plus, it’s broken up lasagna sheets are much easier to eat for kids!
Don’t get me wrong, I love a good classic lasagna recipe as much as the next person but I also love recipes that give me the flavors that I want in a time that works for me and my family. Trust me, you’ll love biting into this one pot lasagna just as much!

Deconstructed: That’s right, no layering for this one pot lasagna recipe! A deconstructed lasagna is one of my favorite recipes to prep when I want all of those cozy flavors of lasagna but in less time.
A one pot recipe: Yes, you can get all of the flavors of lasagna in just one large dinner pot! You’ll simply brown your meat and onions, layer in your sauce and herbs, then fold in some water and your broken lasagna sheets and let it all simmer. Top with your cheese and you’re ready to eat!
Ready in under 40 minutes: All the flavors of lasagna but in under 40 minutes? Sign me up! Almost half of this cooking time is simmering time as well…plenty of time for you to clean the kitchen, set the table, and prepare yourself for a tasty meal!
Extra cheesy: You simply cannot have a deconstructed lasagna recipe without loads of ricotta cheese, creamy mozzarella, and shaved parmesan on top. All of these cheeses melt together for the perfect layer of cheese on top and a great opportunity for an epic cheese pull.
Made with ground beef: While some lasagna recipes have sausage, this is a ground beef lasagna recipe. I like to use lean ground beef for a high quality protein that is rich flavor and full of nutrients like iron and Vitamin B12. I am a dietitian, after all.
Family friendly: This is a perfect family dinner recipe thats full of nutrition, flavor, and held together with the noodles that you know your kids will love biting into.

Ingredients you’ll need:
Lean ground beef: Considering all of the cheese on top of this recipe, I used 96% lean ground beef to lower the fat content. Ground beef is an excellent protein to cook with that is full of flavor and nutrition like protein, iron, and vitamin B12.
White onion: I used a small, finely diced white onion for this recipe but you could certainly opt for half of the onion if you want a smaller portion of onions.
Garlic: Added to taste.
Olive oil: To sauté your onion, garlic, and ground beef.
Herbs: You’ll want alot of fresh basil and fresh parsley for this recipe.
Canned tomato sauce: This is going to be the base of your sauce.
Canned diced tomatoes: To add a boost of nutrition and enhance the texture of your sauce.
Dried italian seasoning: Added to taste!
Salt & pepper: Added to taste.
Lasagna noodles: I used an entire 16 oz of lasagna noodles and broke them up into 2 inch pieces.
Ricotta cheese: A classic in all lasagna recipes. If you really wanted to, you could sub the ricotta cheese for cottage cheese.
Mozzarella cheese: I recommend shredding your own to get the ultimate cheese pull.
Shaved parmesan: For a flavorful topping.
You’ll toss all of these classic ingredients into a large pot, let them simmer, and you’re ready to bite into this flavorful one pot lasagna!
Meat and Ricotta Stuffed Shells

Step by Step Instructions:
Now let’s walk through how to make this easy deconstructed lasagna recipe:
Step 1:
Warm a large pan over medium heat and add your olive oil, onion, and garlic. Stir until they become slightly softened and fragrant (about 5 minutes).
Step 2:
Add your beef and cook with the onions until cooked through, about 10-12 minutes.
Step 3:
Stir in your seasonings, tomato sauce, cubed tomatoes, and chopped herbs.
Step 4:
Break your lasagna noodles into 2 inch pieces and add into your sauce. Pour in one cup of water and stir, pressing the noodles down into the water as best you can.
Place the lid on your pot and simmer your noodles for 20, stirring occasionally and pressing the noodles into the liquid. Cook until your noodles are softened and cooked through.
Step 4:
Remove your one pot lasagna from the heat then add dollops if ricotta cheese then sprinkle in your mozzarella cheese and shaved parmesan. Place the lid on and allow the cheese to melt.
Top with freshly chopped parsley and basil and serve. Enjoy!

What is a good substitute for ricotta cheese?
Cottage cheese is the best substitute for ricotta cheese and will boost the protein content slightly if you choose to swap them for one another.
Can I use a different kind of meat for this one pot lasagna?
I recommend making this recipe with ground beef but you could easily swap it for sausage or ground turkey if you wanted to try a different protein.
