One of my favorite meal prep breakfast to prep are overnight oats. They are loaded with fiber, can be high in protein, and you can change up your flavors and toppings to feel like you are eating a different breakfast every single morning! Plus, they cook themselves!
However, some people simply cannot get past the texture of overnight oatmeal and that keeps them from enjoying this easy breakfast idea. If resonates, I have a solution if you don’t like the texture of overnight oats and that is to make blended overnight oatmeal like this blueberry overnight oat recipe instead!
Overnight oats, blueberries, vanilla greek yogurt, milk, sweetener of choice, and some fresh lemon juice and lemon zest are all added to a large blender cup and blended until smooth. Then, you’ll pour that into your glass overnight oat containers just like you would prep your classic overnight oatmeal recipes.
While the prep is similar, the texture is totally different. Instead of the thick pieces of oats in your overnight oatmeal, blended oatmeal leaves you with a smooth and creamy finish that everyone will love. Beyond its creamy texture, blending overnight oats with blueberries adds tons of flavor, color, and nutrition to your breakfast… even my kids loved it!

Here’s what you’ll need for your blueberry overnight oatmeal:
Old fashioned oats: I still prefer to use old fashioned oats for blended oatmeal recipes but you can also swap these for quick cooking oats if you had that on hand.
Chia seeds: Chia seeds will thicken the texture and add a boost of fiber and plant-based protein to your overnight oatmeal. If you prefer overnight oatmeal without chia seeds, you can add an extra tablespoon of old fashioned oats instead.
Frozen blueberries: Using frozen blueberries will add the most color to your oatmeal but feel free to use fresh blueberries. You can also use fresh blueberries for topping!
Vanilla greek yogurt: I used Oikos Triple Zero Vanilla Greek Yogurt which has a high protein content and no added sugar but you can use your favorite brand.
Milk: I used regular whole milk but you can use ultra-filtered milk for a protein boost.
Cinnamon: Just a dash for some extra flavor:
Maple syrup: To add some sweetness, add maple syrup or honey to this recipe.
Lemon juice: While optional, adding a small dash of fresh lemon juice will really enhance the fresh flavor of your blueberry overnight oatmeal.
Lemon zest: To drive home the lemon blueberry overnight oatmeal flavors… plus it looks great sprinkled on top!

Step 1:
Add all of your ingredients to a blender or large blender cup. Blend until fully smooth.
Step 2:
Pour your ingredients into 1 large glass bowl or 3 individual 8 oz glass containers and seal with the lid. Place into the refrigerator and let it sit overnight.
LTN Tip- These are my favorite glass overnight oat containers and the ones that are pictured. They come in both an 8 oz serving or a 16 oz serving, and I always go for the 8 ounce option. You can also get the 10 ounce option with a different lid.
Step 3:
In the morning, stir your blueberry overnight oatmeal. Feel free to add a splash of milk if you want a thinner consistency.
Top with toppings of choice like fresh blueberries, lemon zest, vanilla greek yogurt, or slivered almonds and enjoy!
Swaps, substitutions, and suggestions:
Here are a few changes you can make to this recipe:
Change your toppings: I like to top my blueberry overnight oats with blueberries, vanilla greek yogurt, and some fresh lemon zest. You could also add flavors like chopped pecans, slivered almonds, or even a cinnamon streusel if you wanted this to taste like blueberry muffin overnight oatmeal.
Skip the blending: If you want to save yourself a dish, leave this as a regular blueberry overnight oatmeal recipe and don’t blend it. Instead, stir all of your ingredients together in a medium bowl and then allow it to sit in your refrigerator overnight.
Swap your fruit: This is a blueberry overnight oatmeal recipe but you could easily change it up by swapping out your fruit. Choose raspberries for a creamy raspberry overnight oatmeal recipe or even add in some mango for a tropical mango overnight oatmeal.
