Fall recipes are upon us and once again, I find myself leaning more into the maple, apple, and cinnamon flavors of fall instead of the pumpkin everything. Don’t get me wrong, you can find plenty of pumpkin recipes like high protein pumpkin chia seed pudding or cottage cheese pumpkin muffins in my recipe index… but you will also find plenty of other fall recipes without pumpkin!
This apple cinnamon baked oatmeal is always one of the first things in my oven come September, it’s a healthy breakfast recipe that is the perfect way to kick off your morning and kick off the fall season!

Oats: I recommend using a mix of old fashioned oats and quick cooking oats in this recipe… trust me, using some quick cooking oats really changes the final texture. If you do not want to buy two types of oats, you can certainly make this recipe with all old fashioned oats as well.
Apple: Use a tart green apple for this recipe for the most robust fall flavor! If green apples aren’t your favorite, you can use any apple variety of your choice but know that the final flavor profile will be slightly different than if you used a tart green apple.
Walnuts: Walnuts are a heart healthy addition to this high fiber breakfast recipe. Full of Omega-3 essential fatty acids, walnuts add a ton of nutrition to this recipe and also a bit of crunch to every bite.
Milk: I always make my baked oatmeal with real dairy milk for a boost of protein, essential nutrients, and hydrating electrolytes.

Add your oats, milk, salt, baking powder, maple syrup, cinnamon, and eggs to a large mixing bowl. Stir until combined.
Step 2:
Chop your green apple into small pieces then add your apple pieces and walnuts to your oatmeal mixture. Fold in the ingredients until combined.
Step 3:
Spray an 8×8 baking pan with non-stick spray or line with parchment paper then pour in your apple cinnamon oatmeal mix. Bake at 375 for 25-27 minutes or until a fork comes out clean.
Step 4:
Allow your oatmeal bake to cool slightly then use a sharp knife to carefully cut it into 9 to 12 oatmeal bars. Serve warm with toppings of choice and enjoy!
