Easy Tri-Tip and Street Corn Rice Bowls (Perfect For Summer BBQs!)

This recipe was developed in partnership with the National Cattlemen’s Beef Association, a contractor to the Beef Checkoff.

As the temperatures start to rise, so do the number of family BBQ nights in our house. I’m partnering with the Beef Checkoff, funded by beef farmers and ranchers, to kick off the summer grilling season with these delicious Tri-Tip and Street Corn Rice Bowls, a meal the whole family can enjoy.

In our home, summer BBQs almost always center around a great cut of beef. Not only is it my husband’s favorite protein to grill, but beef also serves as a flavorful, satisfying foundation for so many meals.

 These bowls feature perfectly grilled tri-tip served over jasmine rice with a fresh street corn topping and a creamy cilantro avocado dressing. It’s a balanced, family-friendly meal that’s just as nourishing as it is delicious, providing high quality protein and 9 other essential nutrients, like iron and zinc. Topped with the fiber rich street corn, this beef bowl can help fuel those busy summer days. 

One of the best parts about this recipe? It can be served family-style, making it easy to customize for everyone at the table—from babies and kids to adults, including those who may prefer smaller portions, like individuals on a GLP-1 journey.

Grilled Tri-Tip and Street Corn Rice Bowl

These Tri-Tip and Street Corn Rice Bowls are the ultimate summer BBQ dinner—packed with flavor, high in protein, and perfect for the whole family.

Ingredients

Tri-Tip and Street Corn Rice Bowls

Instructions

  1. Prepare your tri-tip by removing any excess fat and silver skin. Sprinkle your seasoning of choice evenly on both sides, patting the rub into the tri-tip so that it sticks. Allow your tri-tip to rest at room temperature for 30 minutes prior to grilling.
  2. While your tri-tip is resting, remove all husks and silk from your corn. Rub each piece of corn with room temperature butter and then lightly season with taco seasoning.
  3. Prep a large pot of water, bring it to a boil, and cook your jasmine rice according to package instructions.
  4. While your rice is cooking, place your Tri-Tip on the grill and grill for 25-45 minutes, flipping it half way through and grilling it until it reaches an internal temperature of 145 Fahrenheit and allow it to rest for 3 minutes. About half way through grilling the Tri-Tip, place your corn pieces on the grill and grill them for 10-15 minutes or until it the corn has softened and has grill marks. Remove your corn from the grill and set aside on a plate to cool.
  5. Once your Tri-Tip has reached the appropriate internal temperature, sear your Tri-Tip on high heat for one minute on each side. Remove it from the heat, cover loosely with foil, and allow your Tri-Tip to rest for 10 minutes at room temperature.
  6. While your Tri-Tip rests, add 1/4 cup cilantro, lime juice, cottage cheese, avocado, milk, Tajin, and chili powder to a blender or blender cup and blend until smooth. Adjust any ingredients to taste.
  7. Using a sharp knife, carefully cut the cooked corn kernels off of the cob and place them into a mixing bowl. De-seed and dice your jalapeño, finely dice the red onion, and chop ¼ cup cilantro then add those to the bowl of corn. Add ½ cup of your prepared avocado dressing and stir until it’s well coated.
  8. Place your grilled Tri-Tip on a cutting board and use a sharp knife to slice against the grain, cutting the Tri-Tip into thin strips or small cubes.
  9. Place ½ cup cooked rice in a bowl, add street corn, sliced Tri-Tip, and top with a sprinkle of Cotija cheese, fresh cilantro, and a sprinkle of tajin. Add any additional avocado dressing to taste. Enjoy!
